Happy March everyone! Can you believe how fast the year is going by?! As some of you may know, the season of Lent started this past Wednesday on March 1 and lasts 40 days until April 13. As part of my church community, I am fasting during Lent. I’ve given up sweets, dairy and meat. Through trial and error I’ve come up with some healthy, tasty and filling recipes that are my go-to’s for Lent. I’ll be sharing more recipes throughout the month, but I wanted to start off sharing a healthy breakfast inspiration. Even if you are not fasting, you can incorporate these recipes into your diet as healthy alternatives.
Oatmeal is a great option for breakfast. It’s packed with nutrition and fiber which helps you stay full. You can prepare it quickly and easily customize it with different fruits and nuts. Apple and cinnamon is a classic flavor combination that pairs well with breakfast cereal. The apples add crunch and natural sweetness, while cinnamon enhances the flavor.
Start off with your preferred brand of plain rolled oats. I like using Quaker Oats old fashioned oats or Trader Joe’s steel cut oats. Try to avoid instant oatmeal which can contain extra sugars and sodium. Follow the cooking directions on the box. I like to add a 1/2 tsp. of cinnamon to the oatmeal while it cooks.
